So yeah... I just finished off a tray of all kinds of fancy cheese left in the department dining area and I feel gooooooooooooooooooood. Y'all should try this. I swear I'm high on cheese... or maybe something in the cheese. I'm oddly relaxed, lethargic, and smiling...

Indeed.

It may also have something to do with me living on spaghetti, lentils, canned spinach, and flash-grabbed (a one man flash mob tactic used to obtain large quantities of condiments and soft drinks) taco bell sauce for the past week.

Do you have a penicillin allergy? If so you may want to take a Benadryl. This happens to my brother when he eats mushrooms. He is only slightly allergic to them so all that happens is a bit of loopieness and napping.

But yes, cheese plate equals awesomeness! The only thing ever left over in my department is a hummus plate......or crappy school logo cookies.

There's something else in cheese that the cow releases into the milk - it's basically for drugging the baby cow to make it docile and happy (and eating).

Of course cheese is the deadliest food you can eat. Ignoring for the moment the extremely excessive fat and protein (milk is a concentrated food source to turn a baby into a bull - and this is concentrated milk), casein has been demonstrated to induce cancer in adult mammals to many significant figures. In particular, interesting given that it is a reproductive fluid, is that it seems to have a particular affinity for reproductive cancers.

I hope the high is worth it.

No penicillin allergy, just cheesy goodness and uh.... I kinda liked it :D

We normally get pizza and beer (<-- with a little financial wizardry) twice a week, but this was some funky stuff left over from a meeting with the dean and random administrators. Although I would totally make hummus disappear in any shape or form.

I pretty much snatched the tray and hid in my office for a few hours.

All of the stuff was pretty funky. I recognized baby swiss and feta along with bacon/prosciutto infused bleu cheese (gorgonzola?). Then there were a few that smelled like old shoes but tasted awesome, and something that tasted like smoked salmon, not just smoky, but actually the fish aspect as well.

If you can direct me to the identities of any of the latter group, I will be forever indebted.

The study found that casein shortened the mechanism resulting in the creation of precursor foci in the presence of a carcinogen, not that casein was carcinogenic. T. Colin Campbell comes across as someone too quick to jump the gap from correlation to causation, evidenced by the blackballing from his scientific peers. If he was really onto something, people would be jumping on the research bandwagon left and right.

Cheeeeeese....

Just bought some more gorgonzola last night, for my pear, candied pecan, gorgonzola balsimic salad. Yum. I tried feta and/or blue with it, but it's the gorgonzola that gives it the right flavor blend.

Cheese is good food.

Smooth almost sweet Goat cheese on sourdough with strawberry jam...
Oven warmed gooey Brie in a puff pastry shell on fresh figs...
Blue cheese mixed with butter melting down over a steak done medium rare...
Gorgonzola crumbled over honey roasted pears...
Thin slices of good quality Smoked Cheddar with hunks of roasted chicken breast...
Labneh mixed with toum and hummus in a hot fresh pita...
Buffalo Mozzarella baked till blistering on a Margherita pizza...
Grilled crispy Halloumi so rich it tastes like buttery whole cream...
Thin slivers of Parmigiano-Reggiano adding and old world musk to pasta...

Haven't tried either one of those, though I can't rule them out in the future. I personally consider heroin to be a deathbed last resort nothing to lose sort of thing. In the meantime, well.... I have cheese. :D

(Then again, a quick Google shows that casein binds to opiate receptors :eek:).

I'm taking oldddd cheddar. Mozzarella is more eraser like.

I usually get as sharp a cheddar as I can find in the store... the mild cheap stuff can taste kind of plasticky. But I like sharp tangy cheeses, although I also do like a good mozzarella, or a good provolone with beef/steak.

Basic white cheese made from unpasteurized cow milk. It's little tasteless, as it's fresh. I think it needs to be stored some months to develop more taste. Great for salads and such, and cheap if one have access to cow milk. Easy to make, and can eat it right away. Somewhat similar to mozzarella, perhaps with a bit more character.

I'll stick with goats. Tougher, easier to feed, more companionable...or at least they have more personality, and their milk tends to have more flavor.
